Date and cashew energy balls

  

  High in fibre and disease-fighting antioxidants, dates are a fantastic addition to your diet and these sweet treats will combat your cravings for the processed sugar loaded treats, teamed with cashews in this recipe, the little nut with a lot of power - they're loaded with healthy fat and protein. These balls will provide you with the energy boost you need to slay your day. This recipe makes 24 balls or 12 large balls that will last in the fridge in an airtight container for up to 2 weeks.

Ingredients

  • 2 cups of cashews

  • 1 cup of shredded coconut

  • 2 cups of soft medjool dates

  • 1 teaspoon of vanilla extract

In a food processor, combine the nuts and coconut until crumbled

Add in the dates and vanilla extract until sticky but still crumbly.

Scoop into balls by pressing together firmly and rolling in your hands until compact.

Place on a sheet of baking paper to set in the fridge for at least 30 minutes. Enjoy!
